Sponsored Content: The Butchery, new at Paley Farm

Taking on a beautiful old farm, reviving its charm and nurturing it back to life, was always our goal. We were not satisfied with selling our livestock at market, we wanted to take it one step further. It was a dream to see the whole process through, from pasture to plate and therefore selling directly to our customer was the obvious way to go.

We already had our chosen native breeds, we were changing our grazing system, planting herbal leys, brassicas, turnips etc and switching our Cows and Sheep to a ‘Pasture for Life’ scheme. We wanted to improve the system from the soil up, planting diverse species of grasses and herbs has tapped into giving back to the soil’s health and its ecosystem.

Injecting life through quality livestock and surrounding ourselves with a team that shared our dream. Our Farm Manager, Edward Hall, had a key role within these plans and changes and was instrumental to the success of our livestock and farm, and with these changes in place the livestock stood prouder than ever. We had completed phase one, top quality breeding stock, producing fantastic offspring, sustainably reared and producing the most delicious meat, with animals that have enjoyed a healthy and varied diet.

Next – The Butchery, originally manned by Andrew, who soon couldn’t keep up with demand. Peter Speaight, a well known Craft Butcher from Tunbridge Wells, came at just the right moment and we haven’t looked back since. Now we are proud to stand together and open the doors to our Shop, based on the farm itself and selling our quality meat along with other complimentary local produce!
